Ingredients for Bhature - Avshyak Samgri

  • Maida -400gram (4cup)
  • Suji (Rawa)-50-60gram (1/2 cup)
  • Dahi - 100gram (1/2 cup)
  • Namak-3/4 choti chamach
  • Chini-1 choti chamach
  • Baking soda-3/4 choti chamach
  • Tel- talne ke liye

How to Make Chole-Bhature - Vidhi

Bhature Banane ki Vidhi

Maida aur suji ko kisi bartan me chan kar nikaal lijiye, maida ke bich me jagah banaiye, 2 tablesapoon tel, namak, baking soda, dahi aur chini isme daal kar, issi jagah in sab chijo ko ashi tarah mila lijiye.

Gungune pani ki sahayta se naram aata guth lijiye.

Guthe hue aate ko 2 ghante ke liye band almari ya kisi garam jagah par, dhak kar rakh dijiye.Kadhayi me tel dal kar garam kijiye.

Guthe hue aate se thoda sa aata 1 nimbu ke brabar aata nikaliye.Loi banaiye aur poori ki tarah beliye, lekin yah, poori se thoda sa mota bela jata hai.(Agar aap isse hath se thap-thapa kar bana le).

Poori ko garam tel me daaliye, kaluchi se daba kar fulaiye, dono aur palat kar halka brown hone tak taliye.

Ek plate me papar napkin bichaiye, tale bhature nikaal kar plate me rakhiye.Saare bhature issi tarah bana kar tyaar kar lijiye.

Bhature tyaar hai.Chole, achar aur hare dhaniye ki chatni ke sath garma-garam bhature parosiye aur khaiye.

Ingredients for Chole - Avshyak Samgri

  • Safed chana(Kabuli chana)-250gram(1 1/4 cup)
  • Baking Soda-1/2 choti chamach
  • Tea Bag- 2 tea bag,na ho to 1 1/2 choti chamach chay 1 safed aur saaf kapde me bandh kar paryog kare
  • Tamatar - 4-5 medium size ke
  • Hari mirch-3
  • Adrak-1 inch lamba tukda ya 1 choti chamach adrak ka paste
  • Refind tel-2 tablesapoon
  • Jeera-1/2 choti chamach
  • Hing-1 pinch
  • Anaar dana powder-1 choti chamach se thoda adhik(agar aap chahe)
  • Dhaniya powder-1 1/2 choti chamach 
  • Lal mirch powder-1/4 choti chamach
  • Garam masala-1/4 choti chamach
  • Namak-swadanusaar
  • Hara dhaniya-1/2 choti katori(baarik kata hua)

Chole Banane ki Vidhi

Chano ko raat bhar pani me bhigne rakh dijiye.Pani se nikaal kar chano ko dho kar, cooker me daaliye, 1 chota glass pani, namak aur baking soda mila dijiye, aur tea bag bhi daal dijiye.

Cooker band kare aur gas par ubaalne ke liye rakh dijiye.Cooker me sity aane ke baad gas dhimi kar dijiye, aur 2-3 minute tak pakne dijiye, gas band kar dijiye aur pressure khatam hone tak chano ko cooker me hi pakne dijiye.

Tab tak ham masala tyaar kar lete hai.Tamatar,hari mirch , adrak ko mixi se baarik pees le.

Kadhai me tel daal kar garam kare.Hing, jeera aur anaar dana daal dijiye, jeera bhunane ke baad dhaniya powder daal dijiye.

Chamach se chalaye, tamatar, adrak, hari mirch ka mishran aur lal mirch powder daal kar masale ko tab tak bhune jab tak ki masale ke upar tel na tairne lage.

Bhune masale me 1glass pani aur swadanusaar namak daal dijiye.Ek ubaal aa jane dijiye.

Cooker kholiye aur tea bag chane se nikaal kar faink dijiye.Chano ko iss masale ki tari me mila kar ashi tarah chamach se chala dijiye.

Agar aapko chole adhik gadhe lag rahe ho, to aap unme avshyktanussar pani mila lijiye, ubaal aane ke baad 2-3 minute pakne dijiye.

Gas band kar dijiye.Garam masala aur 1/2 hara dhaniya mila dijiye.Aapke chole tyaar hai.

Cholo ko pyale me nikaal lijiye, hara dhaniya upar se daal kar sajaiye.Garma-garam chole bhature chaval ke sath parosiye aur khaiye.

Tips-

  • Bhature ko bohat jada patla ya bohat jada mota na bele.Lagbhag 3-4 mimi motai iske liye sahi hai.

Isse chole masala, lassi aur salad ke sath dopehar ya raat ke khane me parose.Isse aap kisi bhi any punjabi ya uttar bhartiya subzi ke sath bhi paros sakte hai.
