How To Make Mix Veg Recipe

Ingredients for Mix Veg Makhani-

  • Cauliflower – 100 grams
  • Baby corn – 4
  • Capsicum – 100 grams
  • Tomatoes – 4 (300 grams)
  • Carrots – 2
  • Ginger – 1 inch piece
  • Green chilly – 1
  • Butter – 2 to 3 tbsp
  • Green coriander – 3 to 4 tbsp (finely chopped)
  • Cumin seeds – 1 tsp
  • Cream – ½ cup (100 grams)
  • Oil – 2 to 3 tbsp
  • Brown cardamom – 1
  • Black peppercorns – 6 to 7
  • Cinnamon stick –  ½ inch piece
  • Clove – 2
  • Coriander powder – 1 tsp
  • Turmeric powder – ½ tsp
  • Red chilly powder – ½ tsp
  • Salt – 1 tsp or to taste

How to Make Mix Veg Makhani: Method

Rinse the  ginger, tomatoes and green chilly.Chop them in rough chunks, cut each tomato into four-four pieces.

Rinse the veggies thoroughly.Cut the cauliflower in small chunk.Remove seeds from capsicum and dice it into 1-1 inch small chunks.

Chop the baby and carrots corns in ½ - ½ inch chunks.

To cook the spices heat 2 tbsp oil in a pan or a wok and splutter cumin seeds first.

After the seeds crackle, add coriander powder, chopped tomatoes, turmeric powder, black peppercorns, cinnamon stick, cloves and brown cardamom.Saute the masala until the tomatoes get tender.

Check the masala.Tomatoes have turned soft, turn off the flame and let it cool down.

When the spices cool down grind them finely to make a fine paste.

Place a pan on flame and melt some butter in it.

Add all the chopped vegetables to the pan and roast on high flame for 1-2 minutes.Keep stirring constantly.

Cover the veggies and let them simmer for 2 more minutes.

Take another vessel and place it on flame.Add the masala paste to it and stir gently.

Now add cream to the masala and stir it constantly till you see gentle boil in the gravy.

When the gravy starts simmering add ½ cup water and stir again till it simmers again.

Then add red chilly powder, Salt and green coriander to the gravy.Mix everything really well.

Veggies are cooked, turn off the flame and mix them to the prepared masala.

Cover and let the veggies cook on low flame for 4 to 5 minutes until it becomes soft and tender.Check the subzi after 5 minutes and turn off the flame.

Put the subzi in the bowl and garnish it with some green coriander.

Delicious and very Yummy mix veg makhani sabzi is ready. Serve it with hot chapati, naan, parathas or rice and all eat together.


  • You can put vegetables according to your choice and availability.You can also add mushroom, broccoli etc.
  • By grinding tomato-ginger-green chilli, grinding it and then making the gravy makes it quite delicious and slightly smooth.
  • You can add more or less chilly as per your taste.
